Germinal Organic Coconut Shrimp

These deliciously crunchy coconut shrimp are perfect for any occasion. Don’t even think about breadcrumbs, the Germinal Organic Chickpea & Rice Crackers combined with the shredded coconut are the perfect coating for a crunchy bite. Have a party!   • Prep time: 15 minutes
  • Cook time: 10 minutes
  • 3/4 cup Germinal Organic Chickpea & Rice Crackers
  • 1 cup Sweetened shredded coconut
  • 1/3 cup Coconut flour
  • 2 large eggs
  • 2 tablespoon sweetened coconut milk
  • 1 pound raw large shrimp, deveined and tail on
  • Coconut oil

Step 1: 

Process the Germinal Organic Chickpea & Rice Crackers in a food processor till fine.

Step 2: 

In a bowl, mix the Germinal Organic Chickpea & Rice Crackers flour with shredded coconut.  

Step 3: 

Prepare the eggs mixture by mixing eggs and coconut milk in a bowl.

Step 4: 

Dip each shrimp in coconut flour, then the egg mixture, shake off any excess then press shrimp in Germinal Organic Chickpea & Rice Crackers coconut mixture.

Step 5: 

Once all shrimp are coated. Add coconut oil to a large skillet on medium high heat then cook the shrimp for about 2 minutes on each side or until it’s cooked through.

Serve these tasteful coconut shrimp with your favorite sauce, we love Sweet Chili with this recipe.

Don’t overcrowd the pan when frying the shrimp, place 3 or 4 at time depending on the size of the skillet.
