Start by beating your eggs with an electric mixer until stiff peaks appear.

Then slowly mix the gluten free flour, yeast, oil and Greek yogurt into your mixture.

Gluten Free Pancakes with Blueberries & Greek Yogurt: The American Breakfast With A Special Twist


Pancakes are the American breakfast for excellence.

Start preparing your recipe by combining the white yogurt, some milk and a few drops of lemon.
Let it rest for about half an hour.

Now comes the sweetest moment, while you are waiting for your batter to rest: take the blueberries and cook them in a non-stick frying pan with a little of melted butter.

Add the Greek yogurt, melted butter, egg yolks, lemon zest and mix them into the resting mixture with a whip.
Gradually add your gluten free flour, baking soda and a pinch of salt.

In a separate bowl, beat the egg whites separately and fold them gently into the dough, making sure not to mix the batter too much.
Cook your pancakes and drizzle with your blueberry sauce.
If you want to add a note of extra sweetness, sprinkle your pancakes with honey or maple syrup.
